The Architecture.
With our new facility located above the Saar, on Wiltinger Schlossberg, we not only express our values of excellence and precision in wine, but also in our architecture and design.
It was our goal to recreate, with great attention to detail, a production facility based on the methods of the historical Royal Prussian State Domains (which helped optimize the production processes on the steep slopes of the Saar), enabling cellarmaster Dominik Völk and his team to work exclusively with gravity. This gravity-flow winemaking process better preserves the fragrance and flavor of the finished wine.
The tower-like building, termed the “Monolith” is connected to the cask cellar. Meanwhile, an exclusive visitor courtyard patio has been created above, making the special landscape and our manufactory more enjoyable.
The use of natural stone played an important role in the entire implementation process. It is reminiscent of the mineralized slate slopes in our immediate surroundings. For this reason, light shell limestone has been used on the facades of the buildings. It requires no further treatment, therefore meeting the highest sustainability standards.

The Exclusive Tasting Room.
In our exclusive tasting room, you are able to enjoy spectacular panoramic views of our Saar vineyards, whilst experiencing an excellent winetasting with our special team of advisors.
The tasting room, is located on the ground floor of the Monolith, the design of which is based on the “Bismarck Tower”, located on the opposite slope of the Saar River. The Bismarck Tower was built in 1893, as an expression of pride and self-confidence in the successful Saar viticulture at the turn of the century. In the tasting room, we wanted to create a place in which to convey to our guests the impressive history of the Saar and the craftsmanship of our manufactory.
The Panoramic Viewing Room.
On the upper floor of the Monolith is our panoramic viewing room. The room lives up to its name, offering spectacular views of five of our great sites through the 8.60 meter wide windows. One of these sites is Scharzhofberg, one of the most renowned sites for wine white in the world.
Discover the special ambience of our panorama viewing room: a guided tour of the ,manufactory, a wine tasting, or one of our special events. Among our regular guests are stars of the wine and culinary industry. Naturally our premises are also available for private events too.
The Cask Cellar.
The heart of our production is the cask cellar. The inspiration for the wall design of this unique room came from a typical Mosel vineyard, whose walls are made of natural stone.
In this extraordinary cellar, our Saar wines mature in large wooden casks in line with the 20th-century tradition of the famous Saar wines. The barrels were tailor-made for us by the legendary Austrian barrel-maker Franz Stockinger. The wood used for these barrels comes from the family’s own forests in the Eifel, planted by Roman Niewodniczanskis ancestors centuries ago.
The Rarity Cellar.
A special feature awaits you in the basement of the Monolith: our rarity cellar. True to the historical model, selected vintages and wines from top sites mature in honeycomb-like tanks, over many years to become real rarities.
In our rarity cellar, we present to you the exceptional maturity and high quality of our Riesling wines and here – like the “Monolith”, tie in the history of Saar wine that was internationally renowned around 1900.
